It's been a while...

Wow, it's been so long since I've last blogged. The stress of university is seriously getting to me. Second year is so much tougher than first year. I've been piled in work since September. In the last while, I've still managed to go out and eat lots of yummy food. Just haven't had time to post any of the pictures or reviews. That's going to be my goal for November: update blog once a week!!

The weather's getting cold these days. So what's the perfect dinner for an university student after a long day of classes? Tomato Soup! It's oh so yummy and quite easy to make! I got the original recipe from Being Chelsea, but I tweeked it a bit here and there with my limited supplies. The picture is her's too. I was too busy eating to take a picture of my soup.


Tomato Soup:
- 3 pounds of tomatoes (I mixed cherry tomatoes, plum tomatoes and vine tomatoes)
- 2 medium onion, chopped
- 4 medium carrots, chopped
- 10 whole garlic cloves
- 3 TBSP olive oil
- 3 cans Chicken Stock
- 2 tbsp of mixed spices and herbs (pepper, basil. oregano, thyme, salt)

1. Pre-heat the oven to 400F
2. Mix the tomatoes, onions, carrots and garlic with olive oil and spices/herbs
3. Spread evenly in pans and bake for 30 minutes
4. After 30 minutes, pour everything into a big pot
5. Add chicken stock
6. Simmer for 15 minutes, occasionally stirring
7. Taste & flavor to your liking
8. Turn off the heat and pour soup into food processor/blender
9. Blend
10. Serve :)

If you find the soup too thick, you can always add some liquid (water/stock)
