Typical Meal of an University Student

So every since I moved out for school last year, I've transformed into a food lover. With living away from home, majority of the time I have to cook for myself. As lazy as I get sometimes, I really do try to carry out a healthy lifestyle. Most of the time, when I do cook, I cook in bulk. So I don't have to worry about my next couple of meals.

Roasted Veggies
Ingredients: 
- cauliflower 
- broccoli 
- onions
- garlic
- yellow/orange peppers
- any other vegetable you want
- olive oil
- mixed herbs and spices

Preheat your oven to 400F
After washing them, chop up all your veggies into bite-size and place them in a mixing bowl.


Add olive oil and herbs&spices of your choice. In my case, I just used some basil and lemon pepper. Mix it around well to coat all the veggies.


Put the a single layer of veggies on a pan and pop it into the oven for 45 minutes.

But as an university student, there are times where I rely on packaged meal, like this...
But I do try to add some sort of goodness into it.

Sadly, not all my meals look as good as this one. 
The chickpea salad were lunch leftovers.
And that's just a honey glazed balsamic pork-chop.

It's been a while...

Wow, it's been so long since I've last blogged. The stress of university is seriously getting to me. Second year is so much tougher than first year. I've been piled in work since September. In the last while, I've still managed to go out and eat lots of yummy food. Just haven't had time to post any of the pictures or reviews. That's going to be my goal for November: update blog once a week!!

The weather's getting cold these days. So what's the perfect dinner for an university student after a long day of classes? Tomato Soup! It's oh so yummy and quite easy to make! I got the original recipe from Being Chelsea, but I tweeked it a bit here and there with my limited supplies. The picture is her's too. I was too busy eating to take a picture of my soup.


Tomato Soup:
- 3 pounds of tomatoes (I mixed cherry tomatoes, plum tomatoes and vine tomatoes)
- 2 medium onion, chopped
- 4 medium carrots, chopped
- 10 whole garlic cloves
- 3 TBSP olive oil
- 3 cans Chicken Stock
- 2 tbsp of mixed spices and herbs (pepper, basil. oregano, thyme, salt)

1. Pre-heat the oven to 400F
2. Mix the tomatoes, onions, carrots and garlic with olive oil and spices/herbs
3. Spread evenly in pans and bake for 30 minutes
4. After 30 minutes, pour everything into a big pot
5. Add chicken stock
6. Simmer for 15 minutes, occasionally stirring
7. Taste & flavor to your liking
8. Turn off the heat and pour soup into food processor/blender
9. Blend
10. Serve :)

If you find the soup too thick, you can always add some liquid (water/stock)

Fancy This

Haven't blogged in a really long time. I've been keeping myself busy with a new hobby. I've been making vintage inspired jewelry. I know tons of people making this stuff on etsy, but I just enjoy doing it. I've been thinking of new necklace designs, but first I need some people to buy my existing stuff, so I can purchase more supplies.

A Love of Mine


Today I received a long awaited item I bought back in May. I ordered a "Two hearts become One - Love - Engagement - Marriage - Wedding Your Choice - Ring Bearer Dish" from wiseimpressions 
It was a little smaller then I expected but I still love it! I think I'm gonna order bigger one soon :)
I'm gonna use that one to sell my jewelry, look how nice that looks on it!

Down

We all have good days and bad days, and today was just one of those days.
Over the past 2 year, I have slowly withdrawn myself from many many people, to the point where I think I lack a social life. It never used to be an issue for me. I had many friends, but few who were true, and that was all okay for me because I had J. I'm so thankful to have J in my life. But now that he's all the way across the world, it's a whole different thing. I've tried reviving my social life and going out with friends, but oddly when I do, I the quietest one who just sits there and listens, and secretly wishes she was home instead. J always encourages me to go out more with people, but after making my lifestyle this year for more than 2 years now, it's kinda hard.

Only 53 more days till J comes home =/

Sweet Surprises♥

I'm sure many people love receiving mail. It's like the best feeling in the world, especially when you dont expect it. I'm not talking about a letter. I'm talking about a full out package! Look for came in the past two days! :)


   


So I got this enormous bento box today :) I love bento boxes. I'm not sure why, but I just enjoy making lunches, and you save lots from it!! J left a very cute note along with it, but clearly, it's not his writing/


The second package came last night. I remember telling J about this two days before he left. And then this came a day after he went on vacation. Talk about super fast shipping! I can't wait to go grocery shopping with awesome green bag!

A very sad day :(

This morning, J left to Shanghai for a 2 month vacation with his family :( I've never been away from him for this long. How will I get through these 58 days? At least I have these guys :)
Before J left, he made me this :) A jar of hearts with messages in them. His love is over-pouring out!
 
Look what came in the mail today! My supplies! Just waiting on some more stuff, then I can start making jewelry :)

Mini Splurge

Today, I decided to travel to the heart of downtown Toronto and visit my 3 favourite stores! 

I got these cute fishie measuring cups at Anthropologie as they were on sale. As much as I love this store, I am an unemployed student. It's so hard going in there and not being able to buy the stuff I love so much. 


At Urban Outfitters, I didn't find much I liked, so I only got this cute miniature clock. 
It's actually a lot smaller than it looks. It's approx. 4.5 inches in length.
Like most things I buy, it was on sale for only $3!! What a deal!

At forever 21, I bought this adorable floral strapless dress along with a cute floral tank top that defined your waist and the bottom part of it was flowly.
I've been really liking the floral trend. It's all that I've been buying. 
J told me to relax on the floral cause he thought everything I was buying looked like something in my closet already....


After endlessly walking up and down Yonge street, we settled on a japanese place, Toko Sushi. We thought it was just a typical jap restaurant, but when we went in, there was a sushi conveyor belt!! It's so exciting to see those! Basically there's different plates of sushi, and it's on a moving conveyor belt. The food just comes to you!

Just a thought...

I remember very clearly that when I was 8 years old, I told my parents that as soon as I turned 18, I would go and live on my own. That dream was quickly shattered by their lecturing the financial costs that my dream would require. But in the end, I guess it did happen, since I had to move to another city to continue on with my post secondary education.

After 8 months of freedom and responsibilities, I am now back at home until school starts again. It's incredibly hard to adjust your lifestyle that just consisted of yourself to one that now has 3 extra people. Now you have people eating your food, taking your clothes, bothering you, and so on. On top of that, my parents decided to leave for a 6 week vacation, and left me with my 16 year old sister. When I used to babysit, I was told that age 2 was the worst, thus the saying the "terrible twos." However, I actually think 16 is way worst. At least when they're 2, you have control over them. But with 16, you have deal with their attitude. So not only do I have to be the house maid, I also have to deal her awful attitude and so called "logical" arguments. I can say that since my parents left, I have not done through a day without a headache. 

When I lived with my roommate, I use to get slight agitated when they didn't clean up their messes. I'm a firm believer in "you make the mess, you clean it." But compared the sister, my roommates dont stand a chance. She has the nerves to leave dirty bowls and plates in bedroom for 5 days before taking it downstairs and leaving it in the sink for another 3. Although I force her to was her own dishes, she only does so when her side of sink is so full that you can't put another item in it. Don't get me started on her invasion of every room except mine in the house...

I've survived for 5 weeks, there's only 7 more days. I feel that I'm an elastic stretched to its limit. Hopefully I wont snap in the remainder week. 

At least dinner was good :) 
 Nothing like a nice salad with homemade honey garlic drumsticks!

I'm in the midst of deciding if I should meet J downtown tomorrow (and perhaps go a little early to do some retail therapy) or if I should meet him at the station up here. Hmm....

My idol♥

Taylor Swift was in Toronto on Friday and Saturday. Luckily I got tickets 30 minutes before her last show. So thankful that everything happened this way. I was a bit hesitant at first because of the prices and I didn't want to get too excited since we didn't have tickets yet. You know, the bigger hope you have, the bigger chance of disappointment. But as soon as she came out, I knew I made the right choice. I'm not sure why, but once she came out, I started crying. Tears just flowed out and I couldn't stop it. The whole thing was just so surreal. It was the best concert ever!
 

 
So classy and genuinely down to earth!

A side note of joy

Today, I got my first ever comment!! When I first started this blog (which was 3 days ago), I thought that no one would ever visit and read about little things that occur in my life. Having this one comment inspires me more to continue with this blog, and to learn more about blogging. Hopefully one day, my blog will be similar to the ones that I read everyday!
